Cold/refrigerated Tasks: Cut carcasses, sides and quarters. Cut, trim and prepare standard cuts of meat. Remove bones from meat. Supervise other butchers, meat cutters and fishmongers. Make special sausages. Slice cooked meats. Prepare special displays of meats, poultry and fish products. Shape, lace and tie roasts, other meats, poultry and seafood. Prepare special orders Equipment and machinery experience: Manual cutting utensil. Power grinder. Sausage machine. Slicing machine Personal suitability: Flexibility. Organized.
