Night Baker: As Night Baker you are to report directly to Head Baker or Shift Leader and your key duties include mixing feeds, baking, packing, and closely following existing recipes and procedures. In addition to adhering to all food quality and workplace safety protocols, and ensuring timely completion of baked products. Responsibilities: Mixes all leavens, feeds and poolish using either a Planetary Mixer, Spiral or by hand. Sets time and speed controls for mixing machines, or blending machines, so that ingredients will be mixed according to instructions.. Assist with scaling, shaping and proofing all bread, as required by company standards. Baking all bread related items including but not limited to: buns, sourdough loaves, pitas, baguettes, pullman loaves etc.. Set times, and controls on MIWE deck oven, as well as rotating ovens, and roll-in proofer.
