You will clean, cut, and weigh fish fillets according to specifications for sushi, cooked fish, or for selling at our Seafood section. Duties: Cut, fillet, portion, and prepare fish for sushi, sashimi, and other kitchen items. Break down whole fish and maintain high-quality presentation standards. Prepare and stock seafood section. Follow strict food safety, sanitation, and temperature control procedures. Monitor inventory and minimize waste. Maintain clean workstations and sharpen knives Experience: Experience cutting and processing fish is ideal but not required as we can train. K
