Job Description: -Lead and oversee all culinary operations for Fredrich, The Wyld, Caddy Snack and Banquet Operations.-Develop and execute regular menus, seasonal offerings, and special menus for groups and events.-Create innovative and memorable culinary experiences while staying current with restaurant and hospitality trends.-Coordinate, supervise, and actively participate in food preparation, cooking, plating, and service across all meal periods.-Ensure consistent quality, presentation, portion control, and adherence to Elk Ridge Resort standards.-Monitor food costs and ensure menu items achieve established food-cost targets.-Prepare, review, and manage budgets and forecasts, ensuring food costs, labour expenses, departmental expenses, and revenue targets are achieved.-Manage inventory, purchasing, product quality, and relationships with vendors and suppliers.-Lead, schedule, coach, mentor, and develop culinary team members.-Conduct performance evaluations and provide meaningful rec
